For a mild pot: approximately 6 gallons water, 1 cup kosher salt, 1/2 cup mild seafood-boil seasoning, 2 quartered onions, 2 halved garlic heads, and optional lemon. Keep hot seasoning at the table. METHOD 1. Bring seasoned water to a boil. Add potatoes and eggs; cook 10 minutes. 2. Add sausage and corn; cook 5 minutes. Remove eggs when hard-cooked if convenient. 3. Add frozen crab and precooked crawfish; return to a simmer and heat 4–6 minutes. 4. Add raw shrimp last and cook 2–4 minutes, only until opaque and 145°F. 5. Turn off heat and soak 5 minutes, then drain promptly. 6. If seafood is raw rather than precooked, follow its labeled cooking instructions.
